The layout of the two open areas is similar, but each one has its own unique features. Open gantries above (accessible via narrow stairways outside the central room) will give you some high ground. They aren’t much good for ambushing, though, because you’re wide open for anyone hiding in the second-floor offices lining the side. One of those offices has an escape hatch for snipers, but beware ambushes on the stairs.
Of course, meat goes bad if it’s not kept cold, so that means walk-in freezers. The fog in the cooler can make targeting difficult, and the fact that everything is really cold can screw with your thermal vision. If you want to add even more confusion, pop a shot into the fire extinguisher.
